1 large mango, cubed
1 avocado, diced
3/4 cup macadamia nuts, roasted/salted
2 diced honey crisp apples
5 cups fresh arugula
1/2 cup fresh lemon juice
4 tablespoons apple cider vinegar
1/2 cup olive oil
2 tablespoons Dijon mustard
2 teaspoon agave syrup
dash garlic salt
1. For the dressing, whisk everything together in a large pint glass measuring cup. Refrigerate while you prepare the rest of the salad.
2. Dice the avocado, mango and apples.
3. Put everything in a large salad bowl and toss with the dressing. Serve and top with fresh ground pepper.
Served 4 people.
